How would some one say
she (someone) was a man
O bir adamdı
but I am not sure if that is right because
is not a verb... or is it?

maybe bu kiz bir adam oldu? juts saying o out of context might be confusing.

well I want to say,
she was a man, today she is a woman.
as in she had a sex change...etc etc...

I understand, but again "O" is gender neutral, so if it won't have the same impact it would in English with the gendered third person pronoun. But maybe that would be better? O bir adam oldu, bugun bir kadin.

Yours just says "(S)he became a man, today (s)he is a woman." Remember that olmak has a couple copulative forms.

I'd probably say something like,
Adamdı, artık kadın.
though I don't think it's obvious, really, that the pronoun is "she". However, it's really awkward to note both the pronoun "o" and to use "bu kız".
Other points: I used "artık" because it represents a state change. You could use "şimdi" or "bugün", which capture the idea of "now" and "today" better, but not as much the idea that she used to be something different, which is the whole reason to use "artık".
